Artisan Dough Tray Kit

I have been using these boxes for almost 18 months now. They are a perfect size for the home pizza maker. In my teens, I worked for a local big-chain franchisee in their central commissary. These are an improved version of the larger commercial dough boxes. Nearly airtight, fits in a standard fridge, great forgiving material, and easy to clean. It's kind of an esoteric item to be "excited" about, but this is one piece of my pizza accoutrement that I haven't second guessed the purchase of. Perfect for it's intended use, also great for storing beef balls for smash burgers in advance of large parties.

Those are pricey, but really good dough trays. I used to work at Domino's several years ago and we were using very similar (albeit larger) trays, probably from the same company (though I can't remember for sure) - this is commercial level stuff.Like other recent reviewers, I first got warped trays that would not sit flat (and cause the dough to slide to the sides), but after contacting the seller and eventually the maker (Douhmate/Madan Plastics), they acknowledged some production issues and I was sent a free replacement, without having to send back the previous kit.The new trays and lid are almost perfectly flat, and cosmetically the new plastic recipe yields a much brighter withe too, instead of the off white of the previous model. The new lid also closes much more tightly with the trays, which I guess makes it even more air proof.All in all, this is an excellent product, and if you were unlucky to get a lemon, just ask for a replacement: the customer service is really good and responsive.

Commercial grade plastic but in a size that works at home.You’ll read reviews that tell you the dough sticks to the plastic and that the lid doesn’t seal…. It’s true. What those reviews won’t tell you is that this is exactly how this box is supposed to work so do yourself a favour and buy this one, together with a good book on how to improve your pizza dough (Mastering Pizza by Marc Vetri).It’s worth every dollar you pay.

I purchased my first set about 6 years ago and loved them. They’re not only extremely professional quality, they easily fit in my refrigerator, which is a smaller, apartment sized model. I do lightweight catering and travel with these frequently and they’re still looking like brand new, don’t scuff, scratch or dent easily, and most importantly…they’ve held their shape for airtight stacking and cover fit. They’re so great, I bought another set a few years later and these fit the originals like a glove!
