Does the classic white or golden carmalize like regular sugar?

It doesn't carmelize exactly like regular sugar. It takes a bit longer to melt. It works well tossed on sweet potato fries or as a crumble topping for a fruit pie or crisp. It works great for making holiday candied pecans or almonds. How are you thinking of using it?

What are the monk fruit packets made of paper or plastic ?

I don't remember whether the packets were paper or plastic. I bought the product in May and don't still have it. Apparently I didn't like it well enough to keep and use it because it's not in my pantry, so f I remember correctly, I gave it to a Christian ministry that helps homeless people. I'm very particular about sweeteners and look for low- or no-sugar sweeteners I haven't tried before. My primary standby is very good Stevia packets made by Wholesome Foods, the best Stevia I've ever found. They're sold by Walmart but I buy them from Amazon in a case of 1,000 packets, which is the lowest cost per packet. This is a long answer but I hope it will help you. Best wishes to you!
