I'm looking for something to slide over the hot handles of my stainless steel pot while indoor cooking so I'm not constantly grabbing my bulky mitts?

This is a two-fingers and thumb tool. Typically, two fingers go inside the gripper and your thumb goes on the outside of the flat part to 'pinch' the top edge or handle of a small backpacking pot. With larger indoor cooking pots, depending on the size and contents of the pot, I suppose if you had two of the grippers you could lift each side of the pot via the handles assuming you have enough finger strength.
