Will this keep a refrigerator door open so it doesn't close on an elderly person

No, its intended for door and doorways

Would this work for a chest freezer that no longer stays open when you open it?

I’m doubtful. They did not work on our french doors. Sorry I bought them.

If glued inside the frame of a fridge, will it keep the fridge door from swinging too far back on itself, possibly damaging the door hinges???

I hate it . I tried to use it, but , was not successful
