Can i use this to remove pits from oranges and lemons in my squeezer bowl?

If you are referring to scooping it out of the liquid then yes, but I personally don't like this one because it takes forever to strain the liquid out. I bought it for straining the chunks and fat out of my homemade stocks and it didn't work the way I wanted it to. I would suggest using food grade cheese cloth.

Is it safe to use extremely hot oil?

I’ve never used with extremely hot oil. I’ve used with extremely hot water only.

Is it flat or concave? I cant' tell by looking at the pictures
