Is there a 150 or 200 amp capacity available?

Could the sense cable be extended to ? 50 feet. Does cable need to be shielded? Would cat5 work?

when swtched to read current only does the display still blink or flicker?

I have two of these displaying current at 27vdc. Bought 3 months ago and 3 years ago. Neither of them flicker.

Does the amperage reading or accuracy vary based on the power supply voltage? I have 2 6v batteries in series so I can provide 6 or 12 volts.

Amperage is measured independently of voltage, so the answer to your question is "no." As long the display is powered within the stated "5-120V," amperage shown will be just fine.
