Yes, you can adapt this pan to stir fry noodles. This is a steel pan, so you will have to season the pan well. Many customers will get the enamel pan which help to avoid sticking food. The gas burner in the kit has 3 rings of heat for even cooking. If you use the pan on a traditional stove top, all of the surface may not get hot. Thanks for reaching out with your question.

Q: Can I connect it to regular home gas?

Yes. It will connect to a fixed line or a portable propane tank. May need additional fitting for a fixed gas line.
