It’s a darker chocolate - higher percentage, also different flavor accents.

This is just chocolate, there is no presence of any grain, so should be no gluten. However, maybe it’s manufactured where such si stance can be present - I don’t know. While it’s not a clear answer, I hope it helps you.

how long can you keep it fresh?

This is a great question! I have been writing about chocolate for over 15 years, and I also temper at home. One thing I’ve discovered is that you can keep high cocoa content dark chocolate for years. I even have some Italian dark milk chocolate that’s 56%, not even really dark, and it is kept impeccably well for over 10 years. In my experience, the only chocolate you don’t want to keep for a long time is anything with nuts as they go rancid.

When only the best will work

OK so it’s ridiculously expensive. BUT. When chocolate is the highlight of the recipe this one is the one to go for. Try the following recipe which takes all of 5 minutes to make.1 and 1/8th cup milk heated to frothing in a microwave2 egg yolks4oz best chocolate. I used Guittard and was not pleased. Trader Joe’s was good. I’ve used Valrona which was the best even over Caullibaut. Smooth and creamy.1 oz espresso (instant could be used - Medallio Doro)1 tsp Mexican vanillaMix 2 minutes in mix master blender and refrigerate for 3-4 hours. Keep in mind that this recipe contains raw eggs.

Very tasty but did not give glassy sheen as promised

Very tasty and a wonderful rich flavor. I used them for chocolate covered madeleines and they were gorgeous!However after the chocolate cookies were left out for even an hour the chocolate turned white and kind of spoiled the whole effect.

Expensive but lovely

I used this because I wanted to try a recipe that requires tempering chocolate and this brand came highly recommended. I was very pleased with the results. The chocolate arrived well packaged to keep it fresh and almost entirely unmelted, which is important for the chocolate's ability to temper later. The flavor was delicious and while this is fairly spendy, I think the value is there to back it up. It melted perfectly and tempered easily. Now that I've tried it I will order the larger size which improves the cost a bit. But I'll order the more expensive option if I need to because it's that good! I highly recommend this.
