Because protease helps break down protein, and protein is contained in many foods that aren't meat, including beans and soy, for example. Also, just because the capsules are vegetarian and suitable for that use doesn't mean that vegetarians are the only ones taking them.

Aside from the ascorbyl palmitate (fat soluble vit c) it has a whole host of stuff in the nzimes propietary blend including protease 800,6.0 and 3.0, lipase, amylase, glucoamylase, lactase, invertase, cellulase, hemicellulase, beta-glucanase, phytase and alpha-galactosidase. None active ingredients include hypo-allergenic plant fiber as binding agent and the vegetable based capsule. Contains no gluten, dairy, wheat, yeast, sugar, starch, soy, preservatives or hydro oils. That covers it.
