how does it do in cold or freezing temps?

I'VE HUNTED COYOTE'S WITH IT IN 12 DEGREE WEATHER. NEVER HAS LET ME DOWN. KEEP IT OILED LIKE THE MANUAL STATES SHOULD NEVER HAVE A ISSUE. I'VE LEFT IT IN MY TRUCK OVER NIGHT BY MISTAKE. GOT UP WENT HUNTING AT 7AM. COYOTE DOWN. I WAS NOT 100 PERCENT SURE HOW IT WOULD RESPOND IN COLD WEATHER BUT IT SHOWED ME . RUNS OUT GREAT

How loud is it when it shoots?

Not quiet like a pcp pellet rifle. It's as loud as a hi-velocity 22 rifle, though no supersonic crack. I'm good with stuffing a little tissue in my ears if it's just 1 shot for hunting. My wife can hear the shot with windows & doors closed when I shoot it 50 yds from house.

Can it be used for fishing? Is the speed adjustable as most fishing bows are not 400fps. How much the arrows weigh?

The Airbow isn't set up for fishing at this time, and the velocity isn't adjustable. The arrows are 400 grain including a 100 grain head.
