Q: Which size is more useful?

I like the small one for sauces or drinks. I have never used the big one because I don't think it fits in a pot as well.

It is not plated, it is electronically polished! Pure 100% food contact grade stainless steel! Made 100% in America! :-)

It’s just a smidge over 9” long.

Q: What is the diameter of the whisk part at the bottom (of the small whisk), from the outer edge of the coils on one side to the other?

About 1 3/4 to 2 inches across. It fits in glasses, mugs and small bowls. This is my go to whip for eggs, or making gravy or pudding. It beats the lumps out very well. I rarely use my larger whips.
