How the heck do you install them? Can't hold the latch to screw in. No instructions!

Position where you want latch to be installed, mark and predrill holes, then install screws to fix in place.

Bottom to the closed hook 2.25” Total length both pieces 2.875”

what grade is the stainless steel please? i need SS316

What sized rivets would fit the holes?

Rivets are too big. Use screws. The screws are included but I used somewhat longer screws because of the weight in this box. 8 x 1” screws is what I used as I recall.
