Great gluten free mix
I have had trouble finding a good gluten free chocolate cake mix, so I was super happy when I found this. It is slightly more dense, gritty and dry than a traditional regular cake mix is, but it's a minimal difference. I liked that it had a strong chocolate-y flavor, and stored well.

Great Cake, Modify Recipe
I've been using these mixes for several years now, and only recently my father in law realized that the cakes I was bringing to the potlucks at church are all gluten free.I alway modify cake mixes, and these are by far the best GF mixes I have used. I always use 4 eggs instead of three, to make them more moist, and I usually add extra fat as well. (We are not on a low fat diet.) Recently I removed dairy from my son's diet as well, and the cakes have been great with coconut oil and a bit of coconut milk instead of the butter and yogurt I used to use. I use several other Betty Crocker GF mixes, but this one is my favorite.I once substituted coffee for the water in the recipe when I made this chocolate cake for my sister's birthday and my sister-in-law said it was the best cake she has ever had.My son and I are GF due to ADHD and autism traits, but my sister had Celiac and she has had no trouble digesting this either.

As a gluten free bakery owner...
As a celiac who owned a gluten free bakery and is a cake decorator by trade... I say this cake was pretty good. I used a 10” cake pan and followed the instructions exactly. I set my timer to 38 minutes (the instructions on package were 41-45 minutes) just to check it. And the cake was done at 38 minutes. I took it out and it was fairly moist and tasty. Slightly crumbly, but not gummy. As far as cake mixes, I prefer Pamela’s, but I was not disappointed. The flavor was good, it was moist and not too sweet. It crumbled when sliced, but it’s gluten free- so perfection is a high standard to meet. By texture, it’s not the perfect cake, but good taste and remained moist. Recommendation is to set timer for a few minutes less than the instructions and when toothpick comes out clean, call it done :)

BEST GLUTEN FREE CAKE MIX EVER!
BEST GLUTEN FREE CAKE MIX EVER! I wasn't sure what to expect, I haven't had the best luck with gluten-free cake mixes. No one could tell it was GF, and I mean no one. I am the only GF person in my family and usually when I make a GF dessert, especially cakes, everyone can tell. I made this mix and it was like heaven in a box. Hands down the best GF chocolate cake on the planet! Not kidding! I bought a six package case and will be ordering more. Our grown kids were shocked it was GF. Tip: Buy the Pamela's GF chocolate frosting mix for this cake, the combo is to die for, especially for chocolate lovers.

Celiacs Beware- Not Always GF
My husband has had celiac disease for 12 years. We were so excited when this product came out. I have made this mix many times and it is delicious. A few months ago a relative made this cake for him and he became ill with tell-tale gluten problems. We thought maybe there was some sort of cross-contamination problem while it was being made, because we trusted Betty Crocker. I made this cake again this week and my husband was immediately ill. He was so sick he had to take a day off of work. He was not 100% sure what caused him to be ill, so he ate another piece of cake once he was feeling better- and was immediately ill again. It was absolutely this cake, again. I am sure that there was no cross-contamination in my home, the gluten originated from this mix.I called Betty Crocker to report this and they were sorry but very vague. I was told that it met their standards for gluten free but they would not tell me what those standard are (ppm gluten, etc.). I have five of these sitting in my pantry but I don't feel that I can use them. We've never had a problem with the yellow cake mix, but I'm worried about that one now too. If you are buying this for an optional gluten free diet, it is fine- but if you have celiac disease you might want to think twice.
