I understand that it varies, but from someone who has owned this printer and ran through ink, Approx. how many color prints will a full set yeild?

I average about 15 to 19 13x19 prints. The question depends on what type of photos you are printing, if pictures with lots of black sky or back ground you may need a little black ink, same goes for the skies. You will use less ink for smaller pictures. At the current price it cost me 6 to 7 dollars for 13x19 print, depending on the price of paper. I print on the average of 150 to 200 prints per year.

how long the ink will last if unopened? I mean inside the bag/box and sealed

Canon ink can last for up to two years in its sealed packaging. Even after two years, you may still get some more life out of the cartridge, so it may be worth trying after the fact.

Do you need all cartridges in order to print a black & white photo?

All of the inks must be installed and contain ink in order to print with the Canon printer.
