Beautiful book on Nepali cooking
Santosh Shah I commend you for putting this book together. As a first gen American-Nepali this book is invaluable as it allows me to recreate dishes from my childhood. I’ve always had trouble recreating my parents’ dishes as they cook very much so by “feeling”. This book has helped develop a stronger understanding of Nepali cuisine.

I have been waiting a long time for this book, and am not disappointed. It has a great range of recipes and I am so glad that Santosh did not change his cooking to make it “accessible” as some of the negative reviews on here are saying. This is genuine Nepali cuisine, it is not going to be accessible if you’ve never cooked anything like it or live near an ethnic grocer. Yes I’ve had to travel to look for particular ingredients, but I don’t mind - the results are unlike anything I’ve made before, just mind blowing flavours. Made the Bataka wada with karela chutney last night and the combination of sweet potato dumpling and bitter chutney was inspired. The vegetable rice was also knock out. As someone who has grown up cooking Indian food I thought I understood spicing - Santosh shows that I have so much more to learn. If you want to make great Nepali food, buy this. If you want to make westernised Nepali food using only things you can find in your local supermarket, don’t bother.
