im 6'11" I need a toilet

This toilet is 17 1/2 inches from the floor to the seat. I am 5'11" and its comfortable. There are other ADA compliant toilets that are taller up to 19". Hope that helps!

What is the difference between this model and the American Standard 2985.001.02 also listed for sale by amazon?

Look at the description carefully - one has the rounded bowl and the other has the elogated bowl - it depends upon which you would like better. I really like my purchase of the elogated bowl. The flush action of both models is the best. A modern-looking toilet and it is easy to clean compared to old-fashion toilets with its smooth base.

is there an open back behind the skirt?

it is open on both sides but not in the middle.

If I remove the hinge assembly and toilet seat, is there a different toilet seat I can install that fits this toilet and is more comfortable?

Yes. The mounting holes for the seat are standard. You will need a long bowl seat.
