Q: What is the depth of this pan? Alternatively, what is the volume?

It is only just over 2 inches and thus I am returning it. It is a standard size skillet without the long handle.

Q: Does this have more food capacity than the Ninja 11” wok with high sides?

Apples and oranges? Your question doesn't make sense to me, but if you want a nice pan that easily handles thick cut bacon, poaching chicken breasts, and paella, it is a winner. For traditional oriental stir-fry dishes...use a wok. For deep frying, use the wok or a more traditional, large, vertical sided frying pan. This 12" Ninja is a winner.

Q: What is the Quart capacity?

I never took a quart measurement, but can say the pan is very similar to a typical flare sided 12' pan. It does not have high sides like a wok, etc. It is very good quality and perfect for paella, bacon, family pack chicken breasts and everything else your imagination can create. Buy it....in my opinion you will not be disappointed.

Q: The bottom (inside) of the pan is supposed to be curved right? Mine is higher in the middle slightly so when I add butter it pools at the edge.

It is indeed a little crowned in the middle. It's never bothered me, but then I'm normally doing saute. Not anything that's really fine work. So I toss whatever I'm cooking in the butter or oil quickly when I dump it in the pan and it all works out. But I will confirm that you're not imagining it.
