The best gluten-free cookie mix available!
This cookie mix is by far the best gluten-free cookie mix around. Great flavor, not oily or greasy, and produces the perfect texture.I have used it for chocolate chip cookies, plain cookies, and m&m cookies, and they've come out excellent every time. They're crisp at the edges but stay soft in the middle, unlike most gf cookie mixes.Easy to make, dough is a little sticky, but you can still use a cookie scoop. They do spread out quite a bit while baking, so you need to put them at least 2 inches apart on the cookie sheet. Another outstanding gluten-free product by King Arthur!

I got rave reviews on my chocolate rum cake!
I don't do gluten free myself, but I have the reputation of being a terrific baker and make cakes, cookies, and other things for everyone I can because I love doing so. I have a cousin who recently had to go to a gluten-free diet, and I've been playing with adapting some of my most popular recipes just for her. She lives in another state, so I made a chocolate rum cake for her birthday, starting with this mix as I don't need to keep lots of GF ingredients around, and sent it to her - she and all her friends loved it; she said it was super-rich and no one could believe it was gluten free. Not all GF mixes contain xanthane gum, which is essential to giving a nice crumb; King Arthur's does have it, and is the best tasting as well.I didn't bother with the nuts when I made the cake for her, because she has friends who have allergies; I also made her cake in a disposable angel food pan, as it was easier to ship that way - I just left the cake in the pan.GLUTEN FREE CHOCOLATE RUM CAKE1 18 1/2 oz. box gluten free chocolate cake mix (King Arthur's is 22 oz.; I removed 3 oz.of the mix and just discarded it.)1 pkg. instant chocolate pudding mix4 large eggs1/2 cup water1/2 cup rum1/2 cup vegetable oil2 tsp. vanilla extract1/2 cup chopped walnuts or pecansSAUCE:1 cup sugar1/2 cup (1 stick butter)1/4 cup rum1/4 cup waterDirections:Preheat oven to 325; grease a 10" Bundt pan.Place nuts (if used) in the bottom of the pan, distributed evenly.Mix all cake ingredients with an electric mixer for 2 minutes; pour batter over the nuts in the pan.Bake for about 60 minutes, until a tester comes out clean.Poke the warm cake all over the top with a cake tester or toothpick.Put the sauce ingredients into a small pan, bring to a boil, and cook for 2 minutes, stirring constantly. (Be careful - the rum might "flare.")Spoon the hot sauce over the warm cake; it's best to let it sit overnight, so the rum sauce soaks through.Invert cake onto a plate before serving; the nuts will now be on top. Since I shipped mine in a tube pan and didn't bother with the nuts, I sprinkled the top with powdered sugar to make it look pretty.Enjoy!

Make the best chocolate chip cookies ever!
Now my favorite cookie mix! I usually add 3 cups of chocolate chips and use coconut oil to make gluten free dairy free chocolate chip cookies. They get rave reviews even from those who don’t care about gluten or dairy free!

You Cannot Tell it is Gluten Free
Most packaged gluten free products taste like they’re missing something. They taste perhaps just slightly “off.”That is not definitely the case with this particular cookie mix. It makes a fabulously moist cookie that bakes without that infamous puffy appearance. Add a hearty amount of chocolate chips and your family will definitely blow through the box.I will note that I follow *all* of the box’s instructions - including pushing down the dough ever so slightly. I also find it best to make sure your dough drops aren’t too big.Oh, and note the baking time very carefully. I can easily adjust the time by as a little as just under 2 minutes and either have a super soft cookie or a fairly crunchy one. Timing matters a great deal.

Good alternative to gluten filled products
I purchased this and the vanilla cake for my son's first birthday (we all have a gluten allergy). So far no gluten free products I have tried are exactly like their gluten filled counter parts but this product did pretty well.It wasn't as fluffy as I had hoped it would be but I did get several compliments about it's taste and texture. If you are looking for a good alternative to gluten filled products, I would give this a try. It was considerably better then the Betty Crocker option available in stores.
