Q: House smelled of silicone when cooking. Sweat leaked onto tray below pie. Pie taste like chemicals. 450 oven/should be able to be at 500. by J.Rose

I've never cooked a pie at that high of a temp. I cook my pies at 350/375 and have never experienced any chemical smell or had sweat leak.

Q: I have 11 inch pyrex pie dishes. Where can I find a pie crust shield big enough that doesn't tear?

I also have a 11 inch pyrex pie pie plate, most pie shields will not work or as you say tear. I recommend the Talisman Adjustable Pie Shield, it is made of silicone so it will not tear. It is also adjustable, it opens up and has holes to adjust an lock in place. Excellent for pies the crust will not burn. Gino

Yes. The are like very heavy rubber bands -- they stretch. One on each end holds the rolling pin up off the board by the size of the rubber band's thickness. The ones we use most frequently is for pie crust - 1/8th inch. We use the 1/4 inch size for sugar cookies -- twice as thick as a pie crust. With the even-ness of the thickness, the cookies (and pie crusts) come out PERFECT!!! No thick spots unbaked and no thin spots burned! Wouldn't want to do cookies or pies without them again.

Q: first pie cooked with shield properly in place and the rim crust burned black.

I place the shield on the rim of the crust when the color of the crust is about half as brown as I want it to be. I have seen advice that says to place it before the pie is put in the oven. You might try that. Good luck and keep cooking!
