What if just a foot above counters...how to cap off top edge?

I just left my tile sheets without edging and it looks good. Alternatively you can buy finishing off reel of edging.

Does it stick on cement walls or just sheet rock?

We suggest you can use it on sheet rock. If you would like to use it on cement wall, it will be better to spray the adhesive more on the joint area on both wall and stickers.
