has anyone used for olive oil, and if so, how did it spray-stream, mist, etc?

I don’t know for sure but I don’t think the nozzles would handle olive oil. I’ve not tried. I think the oil would be too thick.

do these hold up to a bleach solution without turning it brown like most cheap sprayers?

Are use them with bleach but it’s diluted I also use them with cleaning fluid And a vinegar solution
