Authentic, tasty and fresh
I have been getting into Moroccan cuisine in the last year or so and have been building my Moroccan pantry. The first products that I purchased were Ras El Hanout , Preserved Lemons and Harissa Paste, which are fundamental and essential items if you want to tackle this cuisine. Kefta is a more specialized spice blend but it very nice to have on hand.Kefta seems have less of an Indian influence that Ras El Hanout. Like many traditional spice blends - each person, restaurant, and shop has their own, "secret" mix. Are far as instantly noticeable ingredients, the usual suspects are coriander, turmeric and paprika. The spearmint and marjoram give this blend both high notes and a little more depth. One of my favorite pastimes is to guess what the "other spices" are in a blend. I would imagine that I am probably wrong more often that right but it is fun to try to identify those trace fragrances and tastes that are often hidden behind stronger flavors. My best guess here is that mustard powder and a stronger ground pepper (maybe cayenne) help to round out this blend. The recipe for Moroccan Meatballs that is listed on the product page for this item produces a good and delicious meal. Deep-frying the meatballs help to give them a little better texture than if you just brown them in a skillet. I use pretty much the same ingredients as a jumping off point for some less-than-traditional recipes. I use equal parts 80/20 ground beef and ground lamb to which I add all of the other ingredients in the meatball recipe. Instead of forming them into balls I make hamburger patties (about 7oz. each). After grilling them I coat one half of the bun with Harissa paste and the other with Mint Chutney . I use sliced preserved lemons instead of pickles skip the cheese (BTW, I use about 50% more Kefta spice blend than the recipe calls for when I make these burgers.)One thing that surprises a lot of my guests is that I use a little Kefta when I make tacos, tamales and chile relleno. For some reason the blend really adds a pleasing extra dimension to my Tex-Mex dishes. Kefta is one of those spice blends that I will always keep on hand.

I love the aroma and like the taste
I love the aroma and like the taste. There isn't any single spice that overwhelms all the others. I have added this to chicken, red meat, and rice so far and my family likes it. I have noticed that I have to add more than my usual amount to get enough flavor. The "best by" date is two years out, so this should be fresh. I don't know why the flavors are muted because it smells kind of strong. I would advise to taste and adjust seasoning before serving.

Pleasantly surprised...
While I do not LOVE this spice, I enjoy experimenting with it and like the exotic essence it gives a dish. I have made meatballs and several meat casseroles with it, and all were delicious. Everyone loved them. If you enjoy being adventurous in the kitchen as I do, and like to open yourself of to new flavor experiences, I highly recommend this.
