Q: What is the actual shelf live once opened?

There is no shelf life written on package but I have kept an open package in a plastic ziplock for a month. The will dry out over time and become brittle so use an open package with a couple weeks is probably best.

There aren’t too many in the package so it goes quickly.

Q: Are these keto friendly?

Yes, but they are so thin, i could not use them as wraps.
