is this fabric cover able to be wiped clean with water? I.E. is it plastic?

It is fabric, not plastic, so will need to be spot cleaned. I have the pink one and haven't even had to spot clean it yet. I use it often and take my Scribe many places to take notes and read. I was concerned about choosing a light color, but am happy I went with a fun color that I enjoy.

How does the device attach to the cover? It's hard to tell from the pictures.

The magnets cause it to simply (and effortlessly) snap into place. It comes away from the cover with very little pressure -- but thus far it hasn't come undone accidentally. I've been completely happy with this case. After being disappointed by many 3rd party cases, this has been a pleasant surprise.

How easy is it to attach and remove from the kindle?

Couldn't be easier. The case simply snaps to the back of the Scribe. Detaches easily -- but not accidentally, in my experience thus far.
