Honed knives
Bought this for a nice Kai Shun chef's knife and ended up using it to sharpen up a few of my older knives too... It gets the edge pretty honed and sharp - the two edges provide just the right abrasions to get my knives gleaming sharp!

Seems to work very well
Does the rough sharpening efficiently, but the 300 is too coarse for some knives, like my Victorinox knives, and it chips the edge of the blade. Once you learn when to switch sides, then there is no problem.

Great item, poor delivery
This was bought as a present for my son, who is a chef. I bought this after extensive internet research and was pleased with the quality and price. My son loves it! He tells me that it is better quality and performance than those used by his executive chef (who won't tell him how much he paid for his!!) and is delighted with the "edge" it pts on his knives. I am happy and he is happy. There is only one downside to this and that is the courier company used to deliver. Yodel are useless, I repeat - useless. I worked for a courier some years ago and more recently for a national home delivery service, had I performed as badly as Yodel then I would have been out of a job. If it wasn't for someone going to the trouble of posting their (unlisted) contact numbers on the internet then my son's Birthday present would have been returned to the seller. It still took several telephone calls to them and having to drive 25 miles to their depot to collect, but he got it eventually. Amazon, you really need to consider changing courier or you will lose sales.

Once you have used one of these, you will never even think of sharpening a knife another way! Fantastic results and much more quickly than I expected. Definitely recommended.

As a restaurant worker who has a rather large collection of shun knives, I purchased this whetstone because I was in the market to upgrade from an old oil stone to something a little easier to use. My oil stone was definitely showing signs of wear. So solely on the advice from a colleague who also uses shun knives, I ordered up. I expected a good product based upon the shun name but this really exceded my expectations. It is a fantastic whetstone to have and to use for a couple of reasons. First, the price is reasonable (like are you kidding me?? a shun product for less than $100!?!). Secondly, my old stone didn't seem to have the best combination of grit - a coarse and a medium - whereas this shun stone has a coarse and a fine and believe it or not that fine grit really makes all the difference in the world between getting those shun knives back to their original razor edge as it will do for any knife. Thirdly, the ease of which this is done is amazing. With several passes on the coarse side, it only takes a couple passes on the fine side to bring a dull knife back to sharp. And working with a water whetstone instead of the oil stone is so much easier. Just plan ahead a few minutes to soak the stone in water and then set it back in it's plastic cradle (truly a great idea there) and away you go. When you are finished, let it sit out to dry. (This may be a downside for some as it takes a good 24 hrs to dry out. I leave mine sitting out on a prep table). And last, the thing that really amazes me is that as you pass the knife along the grits, it really takes no effort whereas my oil stone seemed to be a bit of a chore. Not only did it require a little bit of elbow grease to move the knife along but then there was oil everywhere to clean up. The shun stone leaves no real trace of anything except a thin film of shavings on the knife which is easily wiped off. It makes sharpening knives a breeze and a pleasure. For anyone considering this product, do yourself a favor and purchase it. For restaurant workers, it's a must. It's easy to use, small enough to fit in your kit or case and quick to get your knives back into shape. For home kitchens, this should be something you should seriously consider buying for yourself. It's easy to use and will help you achieve that confidence that goes with cooking great meals because great meals come from great prep work and great prep work comes from sharp knives.

La base antiscivolo in gomma è utilissima, mantiene in posizione la pietra anche sul lavandino bagnato. Scatola di cartone in stile giapponese veramente bella. Ich habe mit dem Stein, nachdem ich ihn 10 Minuten gewässert habe, innerhalb von 15 Minuten ein wirklich herunter gekommenes Ausbeinmesser wieder sehr sehr scharf bekommen. Mit der 300er Körnung erst einige tiefe Ausbrüche ausgeschliffen und einen Vorschliff verpasst und mit der 1000er Körnung das Finish. Für Messer, die in die Vitrine sollen wäre ein noch feineres Korn besser. Für Gebrauchsmesser finde ich die Körnung ideal. Wer Probleme mit der Standzeit der Klingen oder häufig kleine Scharten hat sollte mit einem größeren Winkel schärfen. Die angegebenen 15° sind was für Japan-Messer aus sehr hartem Stahl. Die meisten "normalen" Messer haben einen robusteren Schliff von 25° vielleicht sogar 30°. Über die geht man dann öfters für 10 Sekunden mit einem Stahl. Dann bleiben die sehr lange schön scharf. Der Stein hat nur sehr geringen Abtrag, insbesondere die 1000er Körnung. Beim Vergleich der Steine unbedingt auch die Größe beachten! Bei diesem KAI Stein hat man eine ordentliche Fläche. Fazit: Ich habe aufgrund einer Empfehlung das 2-3 fache von dem ausgegeben was ich vorhatte oder aufgrund er Bewertungen ausgegeben hätte - und ich würde es wieder tun.
