Italian Delicacy
This is my second purchase of these beans. They are of a good size, and when properly prepared, delicious. If you purchase, know they need a week of soaking, changing the water twice a day. Once you are finished soaking them, cook them on a low boil with salt and a small amount of olive oil for about a half hour. Check them to see if they smash using a fork. Once they are cooked, turn down the heat to a low simmer (crock pot works well for this part) for about an hour then allow to cool. Taste them to be sure any bitterness is gone. If still bitter, than soak for a day more. Once they are good, drain them and add a brine of water, salt, garlic, and a bit of pepper or chili powder and whatever other flavors you like. These absorb the flavor from the brine. Then refrigerate them in the brine. They last a long time. We always end up eating them fairly quickly. They are loaded with protein and fiber so an excellent snack food (especially if you are on a diet.)

Good quality for the price. I've gotten larger beans from other places but they also cost more. If you love lupini beans you can't go wrong with this big bag
