Chef's Choice Trizor Model 15XV, Electric Knife Sharpener, 3 Stage

Q: Does this item use stone or diamond abrasive wheels? The exact same model number sells for $179, and that is listed as using diamond.

Working Left to Right, the first stage is a medium coarse diamond disc to realign and set the angle of the blade. (note use this stage sparingly or on a very dull or damaged knife). The second or middle stage is a fine diamond disc which will put the final angle on the edge of the blade. This stage you will use each time you "touch up" your knife. The third or right side stage is a polishing stage with fiber ( I believe a diamond impregnated) discs. Use this stage to remove the burr created by the other stages and to polish the edge of the blade for a keen edge. This stage can be used for serrated edge sharpening also. Use stage 1 and stage 2nd to create a burr. Then the 3rd stage to polish the edge. There is a small lever on the back lower part of the sharpener. This is used to clean any debris from the 3rd stage buffing wheels. I have owned mine 10 years and never used this feature. My recent purchase (March 2023) of the Trizor 15XV was for my son. We are a outdoors family and process our own fish and game, in season they get well used. Follow the directions included or go to the Chef's Choice web site for the tutorial.

All I can tell you is that my son purchased this for our household cutlery. He works in the food industry and when he took it to work to sharpen all the knives, the owner was so impressed ge bought from him.

I'm very happy with this little gizmo and can attest to the fact that it does a GREAT job... takes up very little space on the counter, too, and although I planned to store it until needed. What I found, though, is that I use it more frequently for constantly sharp knives... so easy! (I keep it on the counter now,)

I have sharpened over 20 knifes. They get really sharp. The grinding wheel does take off a lot of material, but if you keep up with you knife sharpening you shouldn't have to do that too often.

Great sharpener.

Great sharpener. Does a great job on any quality of knife. Instructions (and online videos) make it easy to learn and use.Not overly loud. Heavy and solid so you are not fighting to hold sharpener down while using.

Disappointed

Quite disappointed, not very effective. The much more affordable Narcissus (~$35) did a much better job at sharpening our knives. I thought I was upgrading but we’re missing the cheaper guy now. We have really tried, been using it for a couple of months, doing things correctly, the end result is a meh level of sharpness. I would say the level of sharpness we get from the expensive Chef’sChoice is 5/10, when the Narcissus had us used to at least 9/10.Again, just very disappointed.
