I really want to like this yeast based on so many great reviews. So I bought 6 packages in July but did not have the opportunity to use until this week. Unfortunately, I can’t seem to find the best by date. I know that I can test the yeast, but I shouldn’t have too. .Bad packaging. ANNOYING.

I really wanted to like this yeast after all the good reviews. I tried making bread three times with this yeast. I used recipes that have been very successful for me in the past. Each time, after letting it rise for longer than I normally would, my dough did not get much of a rise, always producing a flat, dense bread. I gave this yeast one more try this week. I made ciabatta, a bread I have made many times. The biga didn't get the rise it should, filling only 1/2 of the bowl I always use after almost 24 hours in perfect conditions. I persisted and tried to make the bread. After four rises with the ciabatta dough, the rise was less than what I normally would get with other yeasts. I persisted and hoped it would do its thing in the oven. It didn't. As with all the other breads I made with this yeast, it was dense, only about 1 1/2 inches high, and with little rise. My yeast is not expired and is supposed to be fast-rising. I give up and am going to toss this yeast and not try anymore. Update: After posting my review, I heard from Mike representing the seller. The company was kind and offered wonderful customer service. They apologized for the yeast not rising and offered me a full refund. They did not need to do this, and I greatly appreciate their kindness and integrity. They are a good company that deserves your business.

This is the best yeast I've used for breadmaking. After cutting across the top, the nice 'pillow' packet which is tucked on each corner conveniently stays open, and the inside is coated with a surface that the yeast doesn't stick to, so it slides right out and I don't need to fuss to get the last bits out. After folding the opened end for storage and then reopening, it doesn't develop a tight crease like the foil-laminated packets do. Therefore it is more convenient to dispense the product than with other standard brands. Plus, this yeast seems to be a bit more potent. Initially, I found it was over-rising the dough which later caused the loaf to fall, but after I adjusted the amount a bit lower, it has worked just fine – 2 teaspoons for a 2-lb. loaf in my Zojijushi breadmaker, which I use to make whole wheat bread once a week.

This yeast is superior to store brands. It seems fresher and my bread machine items seem to rise higher with it. I’m using this yeast from now on. No more grocery store yeast for me!
