Hot, Hot, Hot!!
My jar of Ceylon cinnamon arrived the other day. I was pleased that it was larger than I thought it would be, so I will be supplied with Ceylon cinnamon for quite some time. Although I had done my research, so I knew it would have a different taste from the Saigon cinnamon I had been using, I was surprised by the difference. This is a hot rather peppery cinnamon, not a sweet cinnamon. It will have a different use in my kitchen. Looking forward to the kick it will provide in a number of recipes.

For those looking to add flavor but no "bits" i.e. dregs of cinnamon powder in your drink then I would highly recommend these. If you are budget conscious though, these sticks are going to cost you WAY more than powdered cinnamon. Wanting to make Cranberry Wassail, the recipe I use calls for 3 sticks per half gallon. I make a gallon at a time! Experimenting with the sticks and then ground cinnamon I have discovered that 3 sticks is the equivalent to 1 1/2 teaspoons of ground cinnamon. With approximately 36 sticks in an 8oz jar, I could make 6 gallons of Wassail. Living on a tightish budget that's a little too expensive for us. We don't mind cinnamon dregs so we are going to use the ground Ceylon cinnamon from now on.How do these sticks perform? Well! As you can see from my pictures I boil the sticks with the cranberries for an hour. It is important then to strain the liquid. I found the sticks do uncurl a little and make some thick splinters. Excellent taste though. For half a gallon use:2 cups of cranberries3 cinnamon sticks1 tsp whole cloves2 doonks Stevia (very large pinches)1 tsp orange extractUse about 1 1/2 quarts of water to boil the cranberries, sticks and cloves in for about an hour. Strain, add Stevia to personal taste and orange extract and then top up to half gallon with water. Stir well. Although designed to be taken hot we actually prefer this cold from the fridge. (Recipe from Trim Healthy Mama.) The aroma that emanates from this mixture whilst cooking is simply delightful!SO these Ceylon Cinnamon sticks are wonderful releasing their flavor into the liquid they are boiled in. The quality is high and I would recommend if your budget allows. ORGANIC!I purchased these at full price. I was not required to write a review but chose to do so. Packaging issues
The cinnamon is ok tastewise. Not great, not bad. My issue was with the open packaging it was delivered in. The box shown is supposed to be sealed but was about halfway opened and definitely by someone, not a packaging flaw. I did not return this as I checked on the package a little to late to not fall under the "did that really happen range".

Sometimes bigger is not better.
When the windows are closed during warm weather, I use whole cinnamon sticks as part of a potpourri I keep simmering on the stove. The thinner, shorter sticks I used worked great but I thought this product would be even better. Not so. Next time, I'll cut it into smaller pieces or maybe even shave it in hopes of making it more aromatic.

Very nice flavor-surprisingly.
I had read there were different types of cinnamon and that the kind I knew from the regular grocery wasn't even really cinnamon at all. Also note I have never been a huge cinnamon fan but it was getting into the holidays so I figured at least once I would need cinnamon so I ordered this kind to try instead of buying the apparent junk from the store. This cinnamon REALLY does have a nice soft, mellow cinnamon flavor and smell. Not strong and spicy like the general store bought kind. I love it. I have a mortar and pestle and when grinding the stick into powder it is so fresh that it actually has some moisture to it. I have used this cinnamon more in foods and drinks than I had had cinnamon before in my whole life (and I am no spring chicken). Surprisingly delicious! When my jar runs out I will order this brand again for sure. Happy customer.

Ah...real cinnamon
Most of what we call cinnamon in the US is actually cassia, which is not only more bitter than real cinnamon, it contains high levels of coumarin (which might not be a problem for most people, but it does have adverse effects in some).This is the real deal. Softer, sweeter and more aromatic than cassia, this is what cinnamon is suppoed to taste like.

excellent cinnamon
This was exactly as we expected. The sticks are good quality and highly aromatic. they were in very good shape (not broken, etc.).If you like cinnamon but never have tried Ceylon cinnamon, I highly recommend giving it a shot. This package may be more than you want if it is your first time trying this variety, but it is perfect for someone who knows they like it and use it regularly.Make no mistake: 8oz is a lot of cinnamon sticks. We grind it and add it to/put it on many things (granola, ice cream, various baked goods). We also add pieces of sticks to a french press when we want a different twist on our coffee. But I think it will be quite a while (well over a year) before we need to order more.

Ceylon Cinamon
I realize that there must be a certain amount of dryness to this product, but I thought it would be something I could grate and use as needed. I thought the stick would be "sturdier" and not crumble away from the grater. I haven't tried it yet in my Ninja, but even if that turns out OK, I still would not consider this a successful purchase. I would not buy it again.
