I have finally gotten the seasoning down on these pans. Eggs slide right out. Not eating nasty teflon anymore with my omelette!

Small Matfor carbon steel skillet
I own three Matfors. The karge one is great but sometimes a bit too large and always heavy. The smsll one seemed worth a try . First of all it’s lighter and doesn’t season lke the big one. Stays shiny and seems to resist developing a slick non stick coating. The sides are very shallow which causes food to flip out far to easily but I can’t say it is a bad skillet but It has a ling way to go to catch up to the performance of the heavy large one which has only one drawback and that is it’s weight but that may be why food cooks so well in it? This small one is more like a crepe ir pancake pan to me but It may evolve into something usefull. I will keep testing it to

Small, shallow pan
This was smaller and shallower than I had anticipated and will be returning

Pan was smaller
The flat bottom of the pan was much smaller than described. Diameter was ~7"? Didn't want to make such small crepes so I returned it.
