Can anyone tell me how much force you have to exert on the chopper? Can an elderly person operate it?

It depends on what u cut and the blade you use. I have to use quite a bit of force to push or slam it down when using the smallest blade to cut onions. I quarter thr onion first and still hard. When I used the 1/2 blade to cut radishes it was not hard to push.

How big is the cutting surface? In another words how small do the veggies need chopped? In inches please.

Cutting surface is approx 3 inches by 3 inches, so the item your chopping need to be a shade smaller than that..

Why is it so hard to take out the blades?

The blades ARE hard to take out. I take an implement like a spoon or knife and pry them out. Be very careful to not let your fingers hit the blades while removing them, like I did. They will cut you (experience speeking). Hope this helps
