Q: Can I use these in sewing projects?

I do not really know, they are very strong, so it would depend on your project. They might cling too much if using on fabric. I had to return mine.

Q: If I try to sew these inside medium weight fabric layers will it jump to the sewing machine foot or stick to the machine bed? Is this not a good idea?

It is strong enough to stick to the base of the machine. What worker for me was to create (sew) pockets first (three sides) and them placed the magnet and closed it
