If you are somewhat of a newbie to knives like me, but have been cooking a lot and want to upgrade to better quality knives, but not ready for an investment of $300+ check out Bernal Cutlery which does not sell on amazon, but directly from their store.----Bernal Cutlery sells online through their online site (ships from california for $10/free pick-up in store), it's good quality and customer service is informative. Decent selection of some reputable Japanese, European, or USA hand-crafted cutlery for a good deal - was worth the shipping for me. They have stainless steel and carbon steel. Also, I learned that different knives should use different methods for sharpening/polishing blade. I also wasn't paid to write this review - just found better.
