What does it smell like?

Pretty neutral odor, if any. Does not obviously smell like avocados. Certainly less odor than olive oil.

Could you use this to protect wooden salad bowls before storing?

Mineral oil is the preferred wood conditioner and preservative. It is good safe and unlike neutral cooking oils, it doesn't get gummy over time. I've had the same bottle for years. I use it on my chopping block, wooden handles of utensils, and salad bowls.
