Como se usa la pastilla para hacer el queso

Calientas la leche a 37 a 39 grados centígrados. Le colocas una pastilla a 25 litros de leche. La quitas de la cocina y la dejas reposar. En una malla colocas la leche cuajada para que bote el exceso de agua y le vas agregando sal al gusto. Y se coloca en un colador cuadrado con jueguitos para que siga botando el agua. Se le hace un poco de presión por encima para que quede más séquito y listo.

Can you rennet custard with these??

These would likely be too strong for making custard. They are intended to set a firm curd for cheese making.

Did anyone get this to work? I tried this with half a gallon of pasteurized (not Ultra) milk. 1/4 pill resulted no crud. What is wrong?

What you need is to keep the renting temperature constant if possible (your choice between 85 and 105 F). Since you are using commercial pasteurized milk you need to add couple of table spoon of yogurt, cover the container for at least an hour before you add the rennet. When I make the cheese, I choose a temperature ranging between 100 an 105 for the sake of the activity of the starter's organisms. The temperature will drop slowly, but still be fine for the rennet enzyme to work.. good luck.
