Does this have a HDMI port?

Yes it does have an HDMI port which I use all the time on my Panasonic TV for sharp pictures.

This arrived today but has a parental lock on it, does anyone know how we can release it please?

I am sure this lock is controlled in settings and you may be able to reset the settings once you have signed into Xbox Live under your profile. This is the very last splash screen when you are in the Xbox Live desktop. I am sure it is set under your account authorisation. If that doesn't work, you need to contact Microsoft Xbox Support.

Do you have to go online?

No you can play games offline, there may be some games that are designed to only be played online but I don't think so. So long as it's an Xbox360 game and not Xbox one game it should be fine to play offline.
