Superb
This is without doubt the sharpest and most flexible filleting knife I have owned. Incredibly sharp - I’ve even used it for cutting the thinnest of wafers of cured ham and salami. Highly recommend

Excellent product. Very sharp, cuts through most things like butter. Would recommend and can use for general slicing etc not just filleting.

Nick was well pleased and I think they will use this knife every ...
this was a present for my son-in-law, he and my daughter buy fresh fish every week shopping. We got them a set of Wuesthof knives a few xmases ago - that went down well, so we now got this knife and a fitting blade guard, Nick was well pleased and I think they will use this knife every week to prepare the fish they buy
