Q: Is this sufficient enough to run Plex media server ?

Yes, absolutely. It will do software transcoding for anything up to 720p, some content stored in 1080p. If you wanted to use Hardware Transcoding for higher resolutions you would need to use something like a MSI GTX1050 TI 4GT LP graphics card in the PCIe slot for this capability.

Q: I need a powerful enough nas to stream 1080p movies for plex 3+ streams without buffer issues. how well does it stream 1080 or 4k?

I can only comment that it has no issues issues with 4K to one tv at a time, have not done multiples. It has 4 lans to output from so with clever lan connections speed can be increased to using just the one

Yes it does - I've used it with a combination of different drive sizes - 4tb, 8tb and 10tb ... all fine. I didn't create multi-drive volumes though with different sizes so I can confirm what happens there..

In a lot of cases yes, depends on some other things though. Generally 4K video editing will be dependant on the storage being as fast as SSD's, we can only go as fast as the drives as you put inside. If you were to have a couple of SSD's inserted as an editing drive perhaps and a couple of HDD's as your archive, then this could work very well. Ideally you will create a volume on the SSD's rather than use them as an SSD cache for best performance.
