What size of Vycor is best for flashing doors? I was considering 6 or 9"

I think it depends on the thickness of your door jam, However I was told 6 to 9" is the standard for flashing around doors.

How thick is this stuff? Is it as thick as the roofing ice & water shield?

The Vycor Plus flashing is 25mil thickness and Ice & Watershield is 40mil.

Will this work well as flashing under garage roof asphalt shingles? (I'm repairing a hole in the roof)

No it's a window and door flashing. Use Ice and Water shield or roof detail membrane as an underlayment. You need a granular shingle to finish the repair which is exposed to the sun.
