Do these arrive fresh?

Ordered 3 all had the same best use by date 3 months from arrival. So depending on how fast you can go through a barrel yeah. I'd have preferred that they have a longer use by date.

How much in a gallon?

128 US fluid Ounces = 1 gallon The ounces in the container are dry ounces

Are these supposed to be sealed under the cap? Mine came with no seal other than the screw on cap. Is this normal?

There is normally a clear like sealer that goes around the cap .
