Yes, it does need to be refrigerated after opening because it doesn't contain any preservatives; however, it does contain a fair amount of sodium (570 mg/2 tsp) in the form of salt and shrimp paste (which contains salt), so it has natural preservatives. To be honest, I plan to give it away because I don't eat shrimp and hadn't noticed it was an ingredient, but I have other Thai red curry pastes that last months in the refrigerator. The container is 400 g, and they recommend using 50 g / recipe, so that's 8 recipes. That gives you an idea about how long it will take you to go through the container based on how often you prepare Thai red curries.

Hi KC, The major difference between the Mae Ploy red curry paste and the Phanaeng curry paste is the difference in the amount of heat you experience when the curry hits your taste buds. The Phanaeng curry is much milder in taste and can be consumed by almost anyone in the family without having to alter the recipe to suit others that have a low tolerance to spicy dishes or deserts.

what is the sell by date on red and green curry paste and once opened can you store at room temperature or does it require refrigeration once opened?

As to whether or not it needs refrigeration it does. I keep mine in the freezer! I cut a corner off of the inner bag that contains the curry paste, and squeeze some out whenever I need it, directly from the freezer. It'll squeeze when frozen. Then I put it back in the outer cup and back in the freezer!

how does this brand and thai red curry paste compare to Thai Kitchen brand?

I have only used the Thai Kitchen paste and tried to make my dishes taste like my favorite Red Curry Chicken at the restaurant. I couldn't get it to taste even remotely like the dish other than the sweetness of the coconut milk. I have only used the Mae Ploy once, but even the smell was different! I will NEVER go back to store bought again! This stuff is AMAZING!!!! That said, it is definitely spicy, so if you are not a spicy fan, keep it to a minimum.

Very good curry paste, and value for money

Oh wow this is a delicious curry paste. You need surprisingly little to get great flavour. For my first attempt I used more than the recommended amount and it was much too spicy/strong. If you are making a small portion of curry, like for just 1-2 people, 1 teaspoon of this paste is plenty. I add a little sugar and 1/2 tsp fish sauce at the end. For my recent curry I just used an onion, carrot, and some broccoli, a spoonful of peanut butter, and it was a lovely meal with rice. I'm sure it would make very good soups and satay-style sauces also. Given the amount of paste in the jar, I think this could last me quite a long time! It keeps very well in the fridge, but I might try to freeze it in an ice cube tray so that it doesn't go to waste. Excellent value for money.
