Makes GREAT Risotto!
Bought this to make risotto. It is the best rice I have found to make risotto. This is not a cheap rice but it is well worth the cost when making risotto.

Really Nice Flavor, High Quality but Cooks a Little Differently
Makes a nice thick 'broth' and excellent flavor. I find it a little trickier to work with vs Canaroli or Arborio as the 'broth' does not thicken up as readily for some reason at the end. I'm sure a lot of love and effort goes into this product, but I'm not convinced its worth so much extra.

Arborio as it should be
When making Italian risotto or Spanish paella, the rice is not just a side show or a vehicle for something else, but it's the main event. Arborio, a very short grained rice, is high in starch, and in cooking it, it both releases a comparatively large amount of starch, which makes the dish creamy, and it absorbs the liquid -- hopefully a well-made stock. Acquerello arborio 'performs' both of these functions exceptionally well, distinguishing itself in not becoming spongy or gooey in the process, and, as delivered by this company, well packaged so that the starch doesn't degrade and take on a dusty character that happens to rice as it ages.

Excellent Product
I have to say after years of buying what was available in my grocery store, this Rice has changed my mind about Risotto. I would make risotto with other brands, and the risotto never quite tasted good, and the rice didn't hold up well. Acquerello Brand has changed my mind, and my risotto is totally different now. Nice texture, holds up, and flavor is amazing. You should do your research on this product. Well worth the time and they are doing some special things with aging, and nutritional value.

Extremely good risotto rice.
So very good!The texture, the flavor, the everything.No surprise that so many world class chefs use this rice, or the quite expensive aged variety if they have, or are trying for, that Michelin star.

Carnaroli is the best risotto rice! Great texture.
I have not tried any other brand of Carnaroli rice because I like this one so much. Since I can't get a local source I'm not willing to branch out. This is definitely not the least expensive but it's very tasty. The texture is fantastic. Carnaroli is 100% better than Arborio.
