This Blue Corn for Posole Makes Me Feel as if I am in Santa Fe each time I Make It!
This takes time to make because one has to soak it overnight in a large stewpot, like dry beans and peas. Then, when you are ready to start actually making your Posole the next day, you rinse the blue corn and dump the water it has sat in overnight. Then you add fresh clean water back over the posole to cover it and a little extra. Put it in you stewpot on high until it comes to a boil and reduce heat, then cook for 1 hour. Remove the posole again and dump the water again after that. An easy way to do this is put a large colander in your stewpot, put in Posole corn and fill it up with cool water. Then, the next day you simply remove the colander containing the Posole from the pot and rinse it well. Dump water, put the colander containing the corn back in the pot, add water and cook as described above for 60 minutes and again remove the colander filled with the posole, rinse it off, and dump the water from the pot, then pour the corn back into the pot itself, add water and whatever spices and other ingredients such as ham, boneless chicken or pork stew meat (this is the traditional way Posole is made) chopped onion, garlic, Roi-Tel type tomatoes and green chillis, add salt to taste or omit if you are on a low-salt diet, plus other spices as well-crushed chili peppers to your taste or heat tolerance! Bring all to a boil and then lower heat and cook for several hours at least to get all of the flavors melded together well. It makes a very satisfying meal. I love it!

I ordered these in mid-November. They arrived quickly and in perfect condition. It can be difficult to acquire ingredients like these in Minnesota but I wanted to make turkey posole after Thanksgiving for my husband who adores the types of food he ate while living in NM. I did not use the recipe provided on the back, however I did follow the general overnight soaking directions and subsequent boiling directions and simply added them to my recipe.My husband loved the flavor and texture. The texture was perfect and it was much, much better than canned. I feel is important to note if you are hesitant to buy them online the Best By date was 4/24/2022.

Nice Product
A little expensive, but I was craving hominey during the pandemic and walmart doesnt ship canned hominey so I ordered this. Cooked it in my instant pot for 40 minutes (after presoaking 10 hours). Came out great, was a little more chewy than the canned version but it was good.

Good substitute for beans
This makes a really good substitute for dried beans in southwestern meals. I have a bean allergy, and having to give up pinto beans was heartbreaking for me. Pinto beans are in practically everything Southwestern or Mexican. I've hunted high and low for something that would make an adequate substitute, and this works just likes beans, tastes very bean-like, cooks for the same amount of time as dried beans, and creates a very similar hearty broth-like taste that long-cooked crockpot beans create. I love it! I was disappointed to find it out of stock, though. I hope they get more in stock soon.

Delicious Blue Corn Posole - GMO-Free
Absolutely OUTSTANDING!!! Delicious, beautiful and, thankfully, GMO-free. So grateful. From this 12-ounce package, I made Chicken Posole and fed 5 hungry people, 3 of which were men. Everyone loved it! I've already ordered 4 more packages. NOTE: I soaked the posole for half a day then pressure cooked it for 1 1/2 hours, then assembled the entire dish and simmered it on the stove for a couple more hours until everyone was ready to eat. It was delicious.

Delicious!
I prepared this in the crockpot. Delicious! I had ordered the posole soup mix. It was tasty but the posole did not cook as well or get as tender prepared stovetop as it did in the crockpot. Will be ordering again!

Great tasting product, but one of two bags had bugs in it.
I enjoy the blue corn posole's nutty flavor and toothsome texture more than standard white hominy. I had ordered two bags, quickly made a batch of posole (which turned out great) and put the other bag in the drawer. Some time later I pulled it out and noticed moths inside (it was still sealed). So I ended up tossing it. So a word to the wise: stick in the freezer for a few days when you first order them, I wish I had done that.
