Yupik Organic Amaranth Flour, Gluten-Free, 2.2 lb, 35.2 Oz, Non-GMO, Vegan, Pack of 1

I have no benchmark to compare it to, as it is my first experience with amaranth flower. I mix it with pea protein to make fake meat products at home. Apparently it is gluten free, and my friends with food allergies can enjoy. It has a weirdly bitter taste compared to wheat flour, but I'm assuming that is all amaranth flower in general.

Nice light flour with good flavor. No funny after taste like other flours commonly found on the grocery shelves.

So I haven’t tried this yet for making bread, but I’ve made cookies and other goodies and the flour works well to coat things like tofu or veggies. I’m still looking at recipes that will accommodate bread baking.

When I opened this package of flour, it had cobweb type stuff on the top of the bag. I see that in bird seed and the birds will NOT eat it. I smelled the flour and it smelled musty also. I did make corn fritters with the flour and they taste just like the flour smelled ....MOLDY! I will NEVER buy this brand again E-V-E -R!! I threw the flour out along with the corn fritters.

I ordered this as an experiment, but amaranth has a little odd flavor, not horrible but noticeable. The product was a good buy, but I personally don't like it, the flavor or it. Actually, with cinnamon and honey it makes a good porridge but my plan was for healthier bread. It's not good for that, for me.

I thought I was ordering Amaranth, whole, the seeds. They really need to add the word FLOUR to their product description. However, i’m keeping it because I didn’t know they ground amaranth seeds into flour so i’ll give it a whirl
