Could I fit a 2 quart or 2 liter bladder in with some hiking gear?

Definitely. However, I think this bag is more suited for traveling or going to the gym vs. hiking. Only because hiking backpacks usually have the waist straps to support weight. I can fit two jiu-jitsu gi's, toiletry bag, extra clothes and smaller misc items in the main compartment and a pair of sneakers and flip flops or small items in the two side compartments. I use the backpack straps more than the duffle strap since they have light padding for comfort.
