Q: How do you clean the block? Is it dishwasher safe?

My block is made of wood so I would not put in the dishwasher. I imagine a damp cloth will be perfect to wipe it down.

Q: Is the block gray and knives white in the gray set?

No the block is a light wood color and the knife handles are white.

Q: Stainless steel isn't supposed to rust!? Could be a very low grade steel is used on these knives?

We always dry each knife soon after washing it and have had no problems with rust or spotting.

You would have to check their website. My scissors did the same thing and several of the knife handles have cracked. I hand wash all of my knives and am very careful with them. Like you, I should contact Cuisinart. Hope this helps!
