Will you be able to laminate only one side? I don't want to laminate both sides.

No, it has heat rollers on top and bottom. It will heat both sides and seal document.

Does it have an automatic shut off if left on to long?

No, it does not. It has a toggle switch that has 3mil, off, and 5mil settings.
