Do you have to use parchment paper or plastic wrap to get the tortilla off the press?

I always use plastic — I cut a large food bag into two pieces and reuse it. Plastic wrap would be too flimsy and would constantly get folded up, I believe. Parchment, especially nonstick, might work. Without something like plastic or parchment, the dough is surely going to stick. A tortilla this size (from the 10-inch press) is pretty large and while I wouldn’t call it delicate, I wouldn’t call it sturdy, so it needs help.

Can this be used to make indian flat bread?

Im not sure,but I think ,maybe.My wife uses it to make tortillas,which involves pushing the handle all the way down,thus flattening it thin.The thickness,however can be controlled by simply stopping at the desired thickness.In other words,it simply depends on how far down you push the handle.Hope that helps. BTW

Can you remove the handle for storage?

The handle is attached with one hex nut bolt. You could take it off, but it wouldn't substantially shrink the storage size, maybe about 2" from front to back. The height would stay the same because the bracket that the handle pivots in is glued on.

what would be the largest tortilla or flatbread this would make? 9 inch?

well it is a 10in board...so I would not go over 9.
