What is the diameter of the round ends?

Measured with a caliper, the round ends measure 16mm or (very roughly) 5/8". If you were to sit the magnet device on a table, the height of the (single) magnet would be 17mm.

Are the key rings non-magnetic, i.e. alum or non-magnetic stainless steel?

I can see a very slight tug putting the magnet up against the rings. Not much, especially considering how strong the magnets are. No idea what their made of.

If I purchase 2 will the magnet polarity be consistant so I could move keys from one male tip to the other male tip.

It will be ok, make sure use the same side of magnet on the keys, in that you can change as you need!
