Yes heat to 190+ F add corn remove from heat. Stir every 20 minutes or so until > 150 F. Then proceed as per instructions

Q: Do i strain the corn out before i add the yeast and nutrients i lost the set of instructions that came with it ?

Buy large enough mesh bag for your pot. Put corn etc in mesh bag. When ready to add yeast remove solids in bag. It can be done either way by I strain be inputting yeast.

Q: If you use the sanitizer, do you still need to do a sacrificial run?

I would make a 20+ minute run with water to be sure

Q: the amylase converts the startch to sugar, correct? And keeps you from having to use malted corn?

Yes corn does not have enzymes to convert starch to sugar so they must be added.
